Chopped Cheeseburger Sliders

Chopped Cheeseburger Sliders


















1 lb ground sirloin
1 tablespoon Worcestershire sauce
1 tablespoon dehydrated minced onions
Garlic Salt and Pepper to taste
3/4 cup chopped pickles
2 tablespoons pickle juice
1 1/2 cups shredded mild Cheddar cheese (divided)
12 pack Hawaiian rolls
1 tablespoon melted butter

Preheat the oven to 325^F.  Spray a baking sheet with cooking spray.  Keeping the Hawaiian rolls in one large piece (all the rolls are still attached to each other) carefully slice the tops off horizontally.  Place the bottom section of rolls on the baking sheet.

Meanwhile, brown and crumble the ground sirloin, Worcestershire, onions, garlic salt and pepper in a skillet.  When the meat is nicely browned, drain any fat and then reduce heat to low and stir in the pickles and juice and 1 cup of the cheese.  Stir until the cheese is melted, 2 to 3 minutes and remove from heat.

Spoon the meat mixture over the bottom half of the rolls and then sprinkle with the remaining cheese.  Place the top half of the rolls over the meat mixture and brush with melted butter.  Bake for 8 to 10 minutes or until hot through.

These were the easiest Sliders I've ever made, but just OK taste-wise.  I probably will never make these again but if I did, I'd reduce the amount of pickles and the cheese by about half.

James Beard's Burgers My Way

1/2 cup mayonnaise
1 tsp minced roasted garlic
1 large, ripe Beefsteak tomato, sliced
1 thin slice red onion, finely minced
3 tbsp Red Wine Vinaigrette
2 lbs ground sirloin
3 tbsp grated onion
1 tbsp heavy cream
Salt and Pepper to taste
Sliced Swiss or Cheddar (I prefer Swiss, John the Cheddar)
Wickles pickles
Onion rolls, toasted

Mix the mayonnaise and roasted garlic in a small bowl and refrigerate until ready to serve.

Marinate the sliced tomates and minced red onion in the Red Wine Vinaigrette about 30minutes before ready to serve.

Combine the ground sirloin, grated onion and cream and mix lightly. Shape into 6 patties and grill until done. Serve on toasted onion rolls with garlic mayo, marinated tomatoes and Wickles.

Delicious, juicy burgers! And for the record, Wickles are the BEST pickles I've ever eaten in my life! John heard about them on the radio (some DJ was raving about them) so he bought a jar. Awesome pickles!

Cheese Stuffed Burgers

Cheese Stuffed Burgers

1 to 1-1/2 lbs ground sirloin
Velveeta cheese, shredded
French Fried Onions
Garlic salt & Pepper

Form the meat into 8 thin patties. Place shredded Velveeta and some French Fried Onions in the middle of 4 patties. Top with remaining patties and press edges to seal. Season to taste and grill, broil or pan-fry until done. Serve on buns with your choice of toppings.

I usually always make these with Velveeta because it melts so easily, but you can use any cheese you like. These are delicious....I usually add some chopped bell pepper to John's.

Burgers!

John and I went to Whole Foods this morning - I LOVE that store! The produce is always gorgeous, the meats make me drool and by the time I get to the cheese shop I'm positively giddy! We only went there to buy some tomatoes but we ended up with 5 bags of stuff we really didn't need, but we had a great time choosing things.

So, anyways, after scoping out the store, we decided to buy some hamburgers to grill for dinner tonight. They had a great selection of already pattied out burgers which is something I would never buy in a regular grocery store, but Whole Food's meat is just awesome! John chose 2 Cowboy Burgers (beef with bacon, jalapeno, cheddar and jack) and I picked a Gorgonzola Burger (beef with crumbled gorgonzola and bacon). We also bought a jar of Roasted Garlic Mayonnaise and some gorgeous Heirloom tomatoes that we had with the Hamburgers.....and dinner was FANtastic!

The Gorgonzola Burger was delicious, but John's Cowboy Burger was the best of the two. He graciously offered me a taste. I'll definitely buy these again!

Sweet Onion BBQ Burgers & French Fries

Sweet Onion BBQ Burgers

2 sweet onions, halved and sliced thin
2 tbsp butter
2 tsp brown sugar
Salt & Pepper to taste
1 lb ground chuck
2 tbsp bbq sauce
2 shakes Liquid Smoke
1/2 cup finely grated cheddar cheese
Hamburger buns, lettuce, leaves, sliced ripe tomatoes, pickles, mayo and catsup

Melt the butter in a large skillet. Add the onions, brown sugar, salt and pepper and cook over medium low heat until onions are caramelized, about 20 to 30 minutes. Remove from pan and set aside. Combine the ground chuck, bbq sauce, Liquid Smoke and cheese. Shape into 4 patties and grill until done, or pan fry in the same skillet you cooked the onions in. Serve on buns with the caramelized onions and condiments of your choice. Yum!


French Fried Potatoes (from allrecipes.com)

1/3 cup white sugar (I only used a couple of tablespoons of sugar)
2 cups warm water
2 large russet potatoes - peeled, and sliced into 1/4 inch strips
6 cups vegetable oil for frying (I used peanut oil)
salt to taste

In a medium bowl, dissolve the sugar in warm water. Soak potatoes in water mixture for 15 minutes. Remove from water, and dry thoroughly on paper towels. Heat oil in deep-fryer to 375 degrees F (190 degrees C). Add potatoes, and cook until golden, 5 to 6 minutes. drain on paper towels. Season with salt to taste. Delicious!!

Pacific Pork Burgers 5.9.09

Pacific Pork Burgers

1 lb ground pork
Garlic Salt and Pepper
1/2 tsp ground ginger
1/4 cup apricot preserves
1/4 cup bbq sauce
1 tsp soy sauce
4 pineapple slices
4 toasted hamburger buns

Combine ginger, apricot preserves, bbq sauce and soy sauce in a small saucepan and heat, stirring over low heat until well combined.

Form pork into 4 patties and season lightly with garlic salt & pepper. Grill until done, brushing often with the bbq sauce until done. Do not overcook.

Grill the pineapple slices about 1 minute, turning once, or until browned.

Serve burgers on the toasted buns topped with pineapple. Good with a side of Cole Slaw.
