BBQ Cheddar Meatloaf

BBQ Cheddar Meatloaf

2 pounds lean ground beef
3 slices white bread, torn into small pieces
1 tbsp. dehydrated onion flakes
3 Tbsp heavy cream
1/4 cup mayonnaise
1 tsp garlic powder
1 Tbsp prepared yellow mustard
Salt & Pepper
2 cups (8 ounces) shredded sharp Cheddar cheese
1 cup barbecue sauce

Preheat oven to 400 degrees F. Coat a 7- x 11-inch baking dish with cooking spray.
 
In a medium bowl, combine ground beef, bread, mayonnaise, mustard, salt, and pepper. Mix with your hands until well blended. Place on a 12- x 16-inch piece of wax paper and pat firmly into a 10- x 12-inch rectangle.

Sprinkle cheese mixture evenly over ground beef mixture. Roll up jelly-roll style, starting from the short end, by lifting with the wax paper and removing the paper as you roll. Seal the end well.

Place seam-side down in prepared baking dish. Pour barbecue sauce over the roll and bake 55 to 60 minutes, or until no pink remains in beef and juices run clear.

Remove from the oven and allow to stand for 10 minutes. Slice and serve.

Cheese & Onion Meatloaf

Cheese & Onion Meatloaf

1/4 cup breadcrumbs
1/4 cup mayonnaise
1/4 cup catsup
2 tbsp yellow mustard
1 tbsp Worcestershire sauce
1.5 lb meatloaf mix (combination of ground chuck and ground pork)
Salt & Pepper to taste
1 Tbsp yellow mustard
3 tbsp catsup
4 oz shredded Cheddar
3 oz can French Fried Onions, lightly crushed

Preheat oven to 350^F. Gently combine the breadcrumbs, mayonnaise, catsup, mustard, Worcestershire, meat, salt and pepper until well mixed and lightly pack into a 9x5 inch loaf pan. Combine 1 tbsp mustard and 3 tbsp catsup and spread over the top of the meatloaf. Place in the oven and bake for 1 hour.

This was OK. Barely.

Smoky BBQ Meatloaf

Smoky BBQ Meatloaf

1 1/2 lbs ground chuck
1/4 cup mayonnaise
3 tbsp dehydrated minced onion
1/2 cup barbecue sauce
3/4 cup crushed Ritz crackers
1 cup crushed potato chips
3/4 tsp liquid smoke flavoring
Garlic salt and Pepper to taste
1 pinch cayenne pepper
3 slices bacon

Preheat the oven to 375^F.

In a large bowl, combine all ingredients except the bacon and mix well. Spray a 9x13" pay lightly with Pam. Shape the meat into a loaf and place in the pan. Cover the top with bacon strips. Cover the pan loosely with foil and bake for 1 1/2 hours or until done.

Onion Dip Meatloaf, Garlic Mashed Potatoes & Herbed Corn

Onion Dip Meatloaf

1/2 lbs ground round
1 heaping tablespoon mayonnaise
1 cup sour cream
2 tbsp worcestershire sauce
1 (1-oz) packet dry onion soup mix
1/2 cup grated parmesan cheese
3/4 cup plain dried bread crumbs
1 tsp dried basil
1 tsp garlic powder with parsley

Preheat the oven to 375^ F. In a large bowl, combine all ingredients and mix lightly until well mixed. Press mixture into a 9x5" loaf pan. Cover with foil. Bake 1 hour. Remove foil and continue baking another 15 minutes. Let stand 10-15 minutes before serving for easier slicing.

This was good, but I agree with my husband's assessment: "It needs catsup!"


Garlic Mashed Potatoes

2 lbs potatoes, peeled and cut into chunks
1 stick butter
3 tbsp parmesan or romano cheese
1/2 tbsp minced garlic
Salt & Pepper to taste

Cook the potatoes in a large pot of salted water until tender but still firm. Drain and return potatoes to hot pot on the stove for about 1-2 minutes to dry out a bit. Stir in butter, cheese, salt, pepper and oregano. Mash with a potato masher until consistency you like...I like mine lumpy! Adapted from "Garlic Mashed Potatoes Secret Recipe" at allrecipes.com

Also good, buy I'm very relieved that I didn't add the amount of garlic called for in the original recipe! It would have been unbearably garlic-y!


Herbed Corn

1 can gold and white whole-kernel corn
2 tbsp butter
1 tsp freshed minced parsley
1/4 tsp dillweed
1/8 tsp garlic powder
1/8 tsp italian seasoning
Pinch of dried thyme

Heat the corn in a small saucepan until boiling. Reduce heat and simmer about 5 minutes. Drain. Stir in the butter and remaining ingredients. Cover and let set 5-10 minutes over low heat to blend flavors. Adapted from "Herbed Corn" at allrecipes.com

Again, this was good, but I really don't think you can beat plain old buttered corn.

Brown Sugar Meatloaf Variation 1 (original recipe posted in May)

1-1/2 lbs ground beef and pork for meatloaf
1/3 cup milk
2 heaping tbsp mayonnaise
1 tsp garlic salt
1/4 tsp pepper
2 tbsp dehydrated minced onion
1/2 cup quick cooking oatmeal
2 sliced swiss cheese
1/3 cup brown sugar
1/2 cup catsup


Preheat the oven to 350^ F. In a large bowl, thoroughly combine the first 7 ingredients and press half of the mixture into a 9x5" loaf pan. Top with the swiss cheese slices and then the rest of the meat, pressing to seal cheese in. Combine the brown sugar and catsup and spread over the top. Loosely cover with aluminum foil and bake for 45 minutes. Remove the foil and bake another 15 minutes or until the meat is completely cooked. Let stand 10 minutes before slicing. Great meatloaf!


Cheddar-Bacon Mashed Potatoes

Idahoan instant mashed potato flakes, prepared as directed on package
Sour cream
Shredded cheddar
minced chives
Bacon bits

Stir a dollop of sour cream into the hot mashed potatoes. Spoon into a buttered casserole dish, sprinkle with cheddar, chives and bacon bits. Bake at 350^ for 20 minutes.

Yummy! These would be the bomb made with real mashed potatoes instead of instant!

Brown Sugar Meatloaf 5.4.09

This is quite possibly the best meatloaf I've ever made. The original can be found at allrecipes.com but here's my version:

Brown Sugar Meatloaf
2 lbs ground sirloin
3/4 cup milk
2 heaping tbsp mayonnaise
1 tsp salt
1/4 tsp pepper
3 tbsp dehydrated minced onion
1/4 tsp ground ginger
3/4 cup finely crushed Ritz crackers
1/2 cup brown sugar
1/2 cup catsup

Preheat the oven to 350^ F. In a large bowl, thoroughly combine the first 8 ingredients and press into a 9x5" loaf pan. Combine the brown sugar and catsup and spread over the top. Loosely cover with aluminum foil and bake for 45 minutes. Remove the foil and bake another 15 minutes or until the meat is completely cooked. Let stand 10 minutes before slicing.

We had this with Mashed Potatoes and Corn and it was a very satisfying meal!
