Irish Cole Slaw

Irish Cole Slaw

1 apple, peeled and diced
Splash of lemon juice
2 green onions, finely sliced
1 Tbsp grapeseed oil
1 tsp red wine vinegar
1 tsp sugar (or to taste)
1/2 bag cole slaw mix (cabbage, carrots, etc)
1/2 cup mayonnaise
Salt and Pepper to taste

Combine all ingredients in a large bowl and refrigerate about 1 hour.

My opinion:  pretty good.  I still like mine better.  I don't remember where I found this...I jotted the recipe on a scrap piece of paper, and even then I didn't follow the recipe exactly.
